White wine and sage sauce

Ingredients
- 3 tbs butter
- 1 large shallot, minced
- 3 garlic cloves, minced
- 11/2 cups white wine, pour remaining wine in a wine glass
- 2 cups half and half
- 1 tbs corn starch
- 1/2 tsp cayenne
- 1 tbs fresh sage
- 1 tsp freshly grated nutmeg
- chopped parsley for garnish

Preparation
Step 1
Melt butter in a saucepan. Add shallots and cook til softened. Add garlic. Cook for another couple of minutes. Add wine and simmer til reduced by half. Whisk cornstarch into half and half. Slowly whisk into wine mixture. Add spices and sage. Simmer until thickened. 6-8 minutes. Season with salt and pepper.
