Ingredients

  • 1 1/2 cups flour
  • 1/2 cup wheat flour
  • 1 1/2 cups sugar
  • 1 tablespoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups grated carrot
  • 1 apple, peeled and chopped
  • 1 cup raisins
  • 1/2 cup egg beaters® 99% egg substitute
  • 1/2 cup apple butter
  • 1/4 cup canola oil
  • 1 tablespoon vanilla

Preparation

Step 1

1. Heat oven to 375. Spray 18 muffin cups.

2. Sift flours-salt. Add carrots-raisins.

3. Whisk eggs-vanilla. Mix with flour just until moistened. Spoon into cups.

4. Bake 15-20 mins.
