Ingredients

  • 1/2 cup shortning
  • 1 1/4 tsp baking powder
  • 1 cup 2 tlbsp sugar
  • 1 tsp vanilla
  • 4 cups strawberries
  • 1 3/4 cups flour
  • 3/4 tsp salt
  • 2/3 cup milk
  • 2 eggs unbeaten
  • 1 cup heavy cream

Preparation

Step 1

Line 2 greased cake pans with wax paper. Place shortning in large mixing bowl and sift flour, baking powder, salt and sugar. Add milk and vanilla and mix until moist. Beat 2 minutes at medium speed. Add 2 eggs and beat 1 minute longer.
Beat 3 egg whites to soft peaks, add 3/4 cup sugar, 2 tlbsp at a time. Continue beating until stiff and shining. Spread meringue lightly over batter in pans. Bake at 350 for 35-40 minutes. Cool completly in pans on rack.
Spoon strawberries onto merginue and top with whipped cream.
