Skinny Chicken Parmesan 0 Picture

Ingredients

  • cooking spray
  • 3 3 3 boneless, skinless chicken breasts (8 ounces each), fat trimmed
  • 3/4 3/4 3/4 teaspoon kosher salt
  • 1/2 1/2 1/2 cup seasoned whole wheat bread crumbs (recipe below) or store bought
  • 3 3 3 tablespoons grated Parmesan cheese
  • 2 2 2 teaspoons melted unsalted butter
  • 1 1 1 tablespoon olive oil
  • 2 2 2 cups quickest marinara sauce (recipe below) or store bought marinara sauce
  • 9 9 9 tablespoons part-skim mozzarella cheese
  • Whole Wheat Breadcrumbs
  • 4 4 4 slices whole grain bread
  • 1/2 1/2 1/2 teaspoon garlic powder
  • 1 1/2 1 1/2 1/2 teaspoon Italian seasoning
  • Quick Marinara Sauce
  • 1 1 1 tsp olive oil
  • 2 2 2 cloves garlic, smashed
  • 28 28 can 28 oz can crushed tomatoes
  • 1 1 1 small bay leaf
  • 1 1 1 tsp oregano
  • 2 2 2 tbs chopped fresh basil
  • to and pepper to taste
  • to to 15-20 pot, heat olive oil over medium heat. Add garlic and saute until golden being careful not to burn. Add tomatoes and seasonings. Stir and reduce heat to low. Cover and let simmer about 15-20 minutes. Remove from heat and add fresh basil.

Step 1

Preheat oven to 450 Lightly spray a large baking sheet with oil.

Slice chicken breasts in half horizontally to make 6 cutlets. Season both sides with salt, if desired.

In a shallow bowl, combine bread crumbs and Parmesan. In a small bowl, combine the butter and olive oil. Brush the butter and oil on both sides of the chicken, dredge in the bread crumb mix. Put chicken on the baking sheet. Lightly spray oil on top of the chicken.

Bake until golden on the bottom, about 20 minutes. Turn the chicken over and bake until the center is cooked through and the bottom is golden, 5-6 minutes.

Cook marinara sauce until heated through, 2-3 minutes, in a large deep skillet.

Place baked chicken in skillet and top each piece with 1 1/2 tablespoons of the mozzarella. Cover the pan and cook until the cheese melts, 3-4 minutes.
