Ingredients

  • 4 ounces neufchatel cheese, softened
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice
  • 1/4 cup egg substitute
  • 1 1/4 cups skim milk
  • 1/4 cup melted butter
  • 1/4 cup nonfat yogurt
  • 1 teaspoon lemon zest
  • 2 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 3 1/2 tsp baking powder
  • 1 tsp salt

Preparation

Step 1

1. Preheat oven to 400 degrees F. Lightly grease a 12-cup muffin tin.

2. In a bowl, cream together cream cheese, sugar, and lemon juice. Set aside.

3. In another bowl, beat egg lightly with a fork; add milk, butter, and zest.

4. In another bowl, combine flour, sugar, baking powder, and salt. Add egg mixture; stir just until blended. Spoon batter into prepared muffin tin, filling half full. Place 1 Tbsp cream cheese mixture over each; top with remaining batter.

5. Bake in preheated oven for 20 minutes.

Notes: substituted Splenda for half of sugar, yogurt for half of butter (original recipe called for 1/2 cup melted butter), added 1 tsp vanilla. Would substitute more yogurt for more of the butter next time. Excellent! Nice cakey/eggy texture - great warm/toasted!
