Ingredients

  • 1 pound stewing beef
  • 4 cups potatoes – peeled and chopped
  • 4 carrots – peeled and chopped
  • half white onion diced
  • 4 garlic cloves minced
  • 1.5 tsp dried thyme
  • olive oil
  • salt and pepper
  • 4 cups beef stock
  • 1/4 cup flour
  • 1 tblsp butter
  • 2 bay leaves

Step 1

Dry the beef with paper towels. Season beef with salt & pepper and toss with the flour and thyme.

Heat a drizzle of olive oil in a heavy cast iron pot over medium high heat. In batches, brown the beef on all sides. This will only take a few minutes. Once browned, remove from pot.

After all the beef has been browned add in the carrots, onions, garlic and butter. The butter will allow you to scrape at the bottom of the pan and lift up all the delicious brown bits from the beef.

After 5 minutes of sweating all the flavors out of the veggies add the meat, bay leaves, and beef stock. Bring to a boil and then turn down to simmer for 45 minutes.

Add potatoes, salt & pepper to taste and let simmer for another 1.5 hours.

Serve hot and enjoy!
