Ingredients

  • 2 tablespoons ranch salad dressing, lightly beaten
  • 2 egg whites
  • 6 tablespoons yellow cornmeal
  • 1/4 cup parmesan cheese
  • 2 tablespoons flour
  • 1/4 teaspoon cayenne
  • 1/8 teaspoon salt
  • 4 catfish fillets
  • 4 lemon wedges

Preparation

Step 1

1. Heat oven to 425.

2. Mix dressing and egg. Whisk well. Mix cornmeal, cheese, flour, pepper and salt in shallow dish. Dip fish in egg, then dredge in cornmeal.

3. Place fish on sprayed baking sheet. Bake 12 minutes per side. Serve with lemon.
