Ingredients
- 6 boneless skinless chicken breast halves
- 1 tablespoon butter
- 4 teaspoons flour
- 12 ounces evaporated skim milk
- 1 tablespoon chopped chives
- 3/4 cup feta cheese

Preparation
Step 1
1. Saute chicken in sprayed skillet 9 minutes per side or until done. Keep warm.
2. Melt butter in saucepan over medium heat. Whisk in flour and cook 1 minute. Gradually whisk in milk then chives. Simmer 3 minutes or until thick. Add cheese, stir until melted. Spoon over chicken
Notes: Really good! I cut up the chicken into pieces first to make it easier/faster to cook. Used a bit of oil to cook it up. Didn't have chives (or scallions), so added a bit of dried toasted onion. Also added salt and alot of pepper. Very good and a repeater.
