Ingredients

  • 6 eggs, beaten
  • 1 cup egg whites
  • 2 red peppers, chopped
  • 1 green pepper, chopped
  • 1 teaspoon salt
  • 4 tablespoons olive oil
  • 3 garlic cloves, chopped
  • 3-4 green onions, chopped
  • 6 slices Canadian bacon, chopped

Preparation

Step 1

*Chopped tomatoes, ham, asparagus, sausage, cheddar cheese, jalapenos or poblanos, bacon any favorite omelet ingredients would be good.

Spray muffin tin with cooking spray and set aside.

In a sauce pan over med-heat, heat oil and add veggies except garlic. Cook 3-5 minutes. Add garlic and pre-cooked breakfast meat and cook another 2-3 minutes.

In a bowl, mix eggs and egg whites.

Preheat oven to 350°F.
Divide veggie mixture between muffin tins. Top veggies with 3-4 tablespoons of the egg mixture. Sprinkle each frittata with green onions.
