Ingredients
- 1 pound cubed beef stew meat
- 5 c. Beef broth plus 1 c. wine OR 6 c. beef broth
- 1 small onion, chopped
- 1 can (28 oz.) crushed tomatoes
- 1 (16 oz.) package frozen mixed vegetables
- 2 potatoes, peeled and cubed
- 1 t. Ground black pepper
- 1 t. Dried basil

Preparation
Step 1
Place beef in a slow cooker. Pour in water. Stir in onion, tomatoes, mixed veggies and potatoes. Season with bouillon, pepper, salt and basil. Cook on low 8 hours.
Jan 2015: Add an extra cup of red wine. Cut beef (used London Broil) into smaller pieces. Chopped up carrots, onions and celery and used one bag of mixed vegetables. Plus added 4 small potatoes. Could have used one more cup of water.
INSTANT POT: Soup setting for 30 min. then QR.
