Ingredients
- 1 Tbsp olive oil to saute chicken tenders
- 1 pkg chicken tenders
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1 1/2 Tbsp olive oil
- 1 3/4 C sliced onion
- 1 Tbsp minced garlic
- 1 oz chopped pitted kalamata olives..about 14
- 1 medium tomatoe, halved and sliced
- 1/4 C chopped fresh oregano
- 2 tsp fresh lemon juice
- 1 oz feta cheese, crumbled...about 1/4 C

Step 1
Heat olive oil in dutch oven and add onions and garlic. Cook until transluscent. Add chicken tenders. Sprinkle chicken with salt and pepper. Cook 6 minutes on each side or until done. Add a bit more olive oil, if needed.
Add olives and tomat. Cook three minutes or until tomatoes begin to break down, stirring frequently.
Remove pan from heat, stir in parsley, oregano and juice. Sprinkle feta on chicken and serve immediately.
