Ingredients

  • 2 teaspoons chipotle chile canned in adobo, minced
  • 1/2 cup mayonnaise
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1/2 tsp salt
  • 1/4 pound shredded cabbage, about 1 cup
  • 1/4 pound shredded red cabbage, about 1 cup
  • 1/4 cup red onion, chopped
  • 1/4 cup chopped green onions

Preparation

Step 1

1. Combine the chipotle pepper, mayonnaise, honey, salt and lime juice in a large mixing bowl.

2. Stir well, then add the shredded cabbage, red onions, green onions and stir to thoroughly combine. Adjust seasoning to taste.

Notes: Made without chipotles (thought we had them but didn't ...) Still very good and creamy with a nice lime taste to it - delicious!
Made it the second time with the chipotles - it was a whole different recipe and really very, very good. I’d include the chipotles next time but think it’s also great without in case we have guests who don’t like spicy food
