Ingredients

  • 1/2 lb (~4 med) carrots, peeled & sliced
  • 1 clove garlic
  • 1 - 1 " piece of fresh ginger, peeled
  • 1/3 c fresh orange juice
  • 1/4 c tomato juice
  • 2 - 3 T cider vinegar or fresh lime or lemon juice
  • 1/2 t salt

Preparation

Step 1

1. In a small saucepan, cover carrots w/ H2O.
2. Bring to a boil.
3. Reduce heat & simmer, covered until tender, ~ 15 min.
4. Drain & let cool.
5. In a food processor w/ metal blade attached, mince garlic & ginger.
6. Add cooked carrot & process until carrot is quite smooth, occasionally pausing processor to scrape sides of bowl.
7. Add orange & tomato juices, drizzling in H2O as needed if dressing is too thick.
8. Pour into a bowl, cover & refrigerate until serving, up to one week.
9. Stir before using.
