Ingredients
- 1/2 cup finely chopped scallions
- 1 / cup finely chopped celery
- 1/4 cup mayo (a little more)
- cilantro
- 4 tsp lemon juice
- 1 tsp old bay
- 2 tsp dijon
- 1 lb crab
- 3 cups breadcrumbs ( start with 2 cups)
- 2 egg yolks, beaten
- cooking spray

Preparation
Step 1
Mix first 7 ingredients in bowl. Add crab and toss. Fold in 1 cup of breadcrumbs. Season with pepper. Mix in yolks.
Place breadcrubms in dish. Roll crab in breadcrumbs. Cover and chill for at least an hour. Can be made 1 day ahead.
Coat baking sheets with spray and arrange crab. Broil crab for 3 minutes per side.
