Shrimp Remoulade

Ingredients

  • 4 tablespoons prepared yellow 1 large clove garlic
  • mustard
  • 4 tablespoons prepared horse- 1 cup Crisco oil
  • radish
  • 1/2 cup tarragon vinegar 1 bunch green onions with tops
  • 2 tablespoons ketchup 4 ribs celery with leaves
  • 1 tablespoon paprika 1/2 teaspoon cayenne pepper (or
  • to taste)
  • 1 teaspoon salt 5 pounds boiled shrimp, peeled
  • and deveined

Preparation

Step 1

Place all ingredients except shrimp in blender and puree. Store in refrigera¬tor in a tightly covered glass jar. To serve, allow boiled shrimp to marinate in sauce at least 4 hours. Serve over shredded lettuce.
Noni sometimes served this sauce over a wedge of iceberg lettuce and top¬ped it with chopped hard boiled egg. Yum!
