TWO-RICE PILAF WITH DRIED BLUEBERRIES & WALNUTS

Ingredients
- 1/2 cup wild rice
- 2 1/2 cups water
- 2 tbsp olive oil
- 1 small onion, finely diced
- 3/4 cup long grain white rice
- 2 1/2 cups chicken stock
- 1/2 tsp ground sage
- 1/2 cup dried blueberries
- 1/2 cup walnut pieces
- Salt and freshly ground black pepper, to taste
- 2 tbsp chopped fresh parsley

Step 1
Place the wild rice and water in a small pot, bring to a simmer,and simmer until firm-tender, about 20 minutes (the rice will be cooked completely tender when added to the pi8laf). Drain the wild rice well and set aside.
Heat the oil in a medium pot set over medium heat. Add the onion and cook until tender, about 5 minutes. Add white rice and cook, stirring, 3 minutes more.
Mix in the stock, precooked wild rice, sage, blueberries, nuts, salt and pepper. Increase heat to high and bring to a rapid boil. Then cover the rice, reduce the heat to its lowest setting, and cook until the rice is tender, about 15 to 18 minutes. Fluff the rice with a fork, mix in the parsly and serve.
