Ingredients
- 3 cups corn
- 5 medium tomatoes, halved, seeded, chopped
- 2/3 cup red onion, finely chopped
- 1/4 cup olive oil
- 1/4 cup chopped fresh cilantro
- 2 tablespoons chopped fresh mint
- 2 tablespoons white wine vinegar
- 1 tablespoon fresh lime juice
- 2 teaspoons brown sugar (packed)
- 1 garlic clove
- Salt and pepper

Preparation
Step 1
1. Combine corn-red onion.
2. In blender, purée until smooth: olive oil-salt and pepper.
3. Just before serving, pour dressing over corn mixture and toss.
Notes: Very good and easy. A nice summer dish. Left out the mint and used only 2 tbsp oil. Could probably cut back the oil even more.
