Ingredients
- 2 lb jumbo shrimp
- flour
- 2 eggs
- 3 tbsp milk
- bread crumbs
- Stuffing
- 6 oz crab meat
- 4 green onions, finely chopped
- 1 stalk celery, finely chopped
- 1 egg white
- 2 tsp. cornstarch
- 1 tsp. dry sherry
- 1 tsp. soy

Preparation
Step 1
Peel and butterfly shrimp.
Mix together stuffing ingredients.
Press about 1 rounded tablespoon of stuffing onto each shrimp.
Coat with flour, then egg wash, then breadcrumbs.
Refrigerate until ready to deep fry
