- 8 chicken pieces
- 1/2 c. flour
- s&p
- 4 c. cornflakes
- 2/3 c. buttermilk
- 2 tbs. dijon mustard
- 1/4 tsp. cayenne pepper
- 1 1/2 tsp. paprika
- 3/4 tsp. sage

Step 1
Preheat oven to 425 deg. In a wide bowl or plate season the flour with s&p. Dredge chicken pieces in flour so it's full coated, tap against bowl to shake off excess flour & set aside. Crush the cornflakes. Mix the buttermilk, mustard, cayneese, paprika and sage. Give each chicken piece a good buttermilk bath and then roll in cornflake crumps. Arrange chicken on baking sheet. Cook for 15-20 min, lower the heat to 375 deg. and cook for another 25-30 min. until cooked through & crispy.
