Ingredients
- Crust:
- 3 Tbsp vegetable shortening
- 2/3 c flour
- 1/8 tsp salt
- 1/3 c low fat cottage cheese, sieved
- Filling:
- 4 oz artificial eggs
- 3/4 c sugar
- 1/2 tsp pumpkin pie spice
- 1/8 tsp salt
- 1 tsp flour
- 1/2 tsp ginger
- 1/2 tsp cinnamon
- 1 12% can evaporated skim milk
Preparation
Step 1
Crust:
Cut shortening into flour until crumbly, add cottage cheese, toss with fork until all is moistened.
Form dough into ball, flatten on floured surface with hands 3 times across in both directions.
Roll out to 1/8 in thick, put in 9 in pic pan.
Pour in filling and bake at 425 degrees for 15 minutes.
Turn heat down to 350 degrees and bake 45 minutes longer.
Filling:
Combine all ingredients and mix well.
