Ridiculously Awesome Oat Waffles 1 Picture

Ingredients

  • Optional Topping (this makes enough topping for 1 waffle, increase as desired):
  • 1 1/2 cups Oat Flour (if you have a food processor and some oats you can make your own flour – just put 2 cups of oats and let it go until it looks like flour!)
  • 1 tablespoon Baking Powder (aluminum free)
  • Pinch Salt
  • 2 Eggs
  • 1 cup Milk (non dairy is perfect, I use almond – but dairy milk works too!)
  • 2 tablespoons Maple Syrup
  • 2 tablespoons Coconut Oil (feel free to sub in olive oil if that’s all you have)
  • 1 teaspoon Butter
  • 1 tablespoon Maple Syrup
  • 1 Banana sliced
  • 1 pinch Cinnamon

Makes 6 Waffles

I must admit that sometimes my recipe experiments, specifically baking ones, fail miserably.  Its all in good fun, and I usually play until they are edible, but I need to toot my own horn a little to tell you this one came out great on my first try.  You should have seen me dancing around the kitchen in celebration as I stuffed waffle in my mouth.  Make these for breakfast and you will be a hero in your house!

If you are going gluten free, make sure your oats are gluten free.  Oats are often processed in plants that also process wheat products, and they can cross contaminate.  I have linkage for gluten free oat flour below.

Whisk all the ingredients to combine

Cook in your waffle maker of choice until golden and delicious

Heat a nonstick pan on med-high heat

Add the butter, banana, cinnamon and maple syrup

Pour over waffles, and devour!!

i skipped the honey and added 0 cal sweetener and replaced the oil with unsweetened apple sauce (for the dieters) and these.are.FANTASTIC!! my family loves them everytime I make them. so good!!
