Ingredients

  • 1 1/2 c flour
  • 1/2 c chickpea flour
  • 1/2 t salt
  • 2 t canola oil
  • 1 c water
  • 1 c soy milk
  • For sweet crepes add 2 tablespoons of sugar.

Preparation

Step 1

Mix all ingredients with a whisk.
Over medium-high heat, heat a 9-10" crepe pan or heavy skillet.
Spray with non-stick cooking spray.
Ladle 1/3 cup batter into pan.
Tilt pan and move in circular motion to spread batter evenly.
Cook 1 - 1.5 minutes. (Center will bubble and edges will begin to brown).
Flip and cook other side for 30 seconds - 1 minute.
