Ingredients
- 1 clove garlic
- 1 lg ripe Hass avocado, halved, pitted & peeled
- 2 T cider vinegar or fresh lemon juice
- 1/4 c chopped fresh cilantro
- 1 t ground cumin

Preparation
Step 1
1. in a food processor w/ metal blade attached, mince garlic.
2. Add avocado & vinegar; process until fairly smooth.
3. With motor running, drizzle in 2/3c H2O.
4. Scrape into a bowl & stir in cilantro, cumin, salt & pepper.
5. Cover surface of dressing w/plastic wrap to prevent browning; refrigerate until serving, up to 1 week.
6. Stir before using.
