Ingredients

  • 2 LBS Lean Groung Beef
  • 1/2 C Shredded Carrot
  • 1/3 C Water
  • 1 C Oats, uncooked
  • 1/2 C Finely diced Red Pepper
  • 1/4 C Egg Beaters
  • 1 C V8 Juice
  • 1/4 C Finely diced Red Onion
  • Salt & Pepper to Taste.
  • BASIL SAUCE;
  • 4 C Canned tomatoes & Liquid
  • Chopped
  • 1/2 C Diced Onion
  • 1/4 tsp Dry Thyme
  • 2 Tbsp Canola Oil
  • 2 tsp Dry Basil
  • 1/4 tsp Orange peel, grated
  • 1 Bay Leaf
  • 1 C V8 Juice

Preparation

Step 1

Bake 350* Loaf Pan

Place vegetables in steamer basket
and steam over water until tender.
Allow to cool to room temperature.
Combine all ingredients except beef
amd mix thoroughly. Add beef and mix
lightly to combine. Do not overmix!
Shape into loaf & place in Loaf Pan
or on lightly oiled baking pan.
Bake in middle of oven for 1 hour.

Serve with Basil Sauce
In heavy bottomed sauce pan, saute
onion in canola oil until tender.
Add all other ingredients except V8.
Cook until most of the liquid evaporates
about 20 min. Add V8 and simmer 5 min.
Serve with Meat Loaf.
