Ingredients

  • 1 lb lean beef steak, cut into 1-omch chunks, or lean ground beef
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1/2 of each green and red pepper, chopped
  • 1/3 cup corn niblets (canned or frozen)
  • 1/3 cup tomato paste
  • 1/2 cup beef broth
  • 2 tbsp chilli powder
  • 1 tsp dried oregano
  • 1 tsp cumin
  • 1/2 tsp hot pepper flakes
  • 2 cans (14 oz) red kidney beans (undrained)

Preparation

Step 1

In a 4 L saucepan, sauté beef chunks in oil until browned. Add onion, garlic, peppers and corn. Sauté 3-5 minutes, until softened. Add chopped tomatoes, tomato paste, broth and seasonings. Simmer over medium heat for 15 minutes. Add red kidney beans and heat through.
