  • 1/4 cup olive oil
  • 8 medium garlic cloves, finely chopped
  • 2 tsp black pepper
  • 1/2 cup, plus 6 tbsp soy sauce, divided
  • 4 (6oz) sirloin steaks about 1 inch thick
  • 1/4 cup dry white wine
  • 1/4 cup mirin (like kikkoman)
  • 2 tbsp rice vinegar
  • 2 1/4 tsp dijon mustard
  • 1/4 cup sliced scallions
  • sesAME seeds for serving

Step 1

preheat grill or grill pan to medium high (400 to 450). stir together oil, garlic, pepper and 1/2 cup soy sauce in a shallow baking dish. add steaks in an even layer, marinate at room temp 5mins.

stir together wine, mirin, rice vinegar and remaining 6 tbsp soy sauce in a medium sauce pan. bring to a boil over medium high; cook undisturbed , until slightly thickened, 2 to 3 mins. remove from heat. let cool to room temp, about 10 mins. whisk in mustard; set aside until ready to serve.

remove steaks from marinade, and pat dry with paper towels. place steaks on oiled grates, grill uncovered, to desired level of doneness, about 5 mins per side for medium rare. remove from heat; let rest at room temp 3 to 5mins.

thinly slice steaks against the grain. sprinkle with scallions and sesame seeds; serve with reserved mustard soy sauce.
