Ingredients
- Cookie:
- 1 cup butter, softened
- 1/3 cup powdered sugar
- 1 egg
- 3/4 tsp almond extract
- 3 oz pkg instant pistachio pudding mix
- 1 tsp vanilla
- 2 cups flour
- 1/2 cup mini chocolate chips
- 2 cups finely chopped pecans or pistachios
- Filling:
- 2 TB soft butter
- 1 tsp vanilla
- 2 cups powdered sugar
- 2-3 TB milk
- Glaze:
- 1/2 cup chocolate chips
- 2 tsp shortening

Step 1
Cream together butter and sugar. Add egg and flavorings. In separate bowl combine flour and pudding mix. Add this to creamed mixture. Stir in chips and shape into 1" balls. Roll in nuts. Place on cookie sheet and make a thumbprint in each cookie. Bake at 350 for 10-12 minutes. Let cookies cool.
Combine filling ingredients and drop into each cooled cookie. Melt glaze ingredients in microwave. Stir well and drizzle over each thumbprint.
