Ingredients
- Cake:
- 1 cup quick oatmeal
- 1 1/2 cups boiling water
- 1 stick margarine
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 1 tsp vanilla
- 1 1/3 cups flour
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- Topping:
- 6 tbs margarine, softened
- 1/2 cup confectioners sugar
- 1/4 cup evaporated milk
- 1/2 cut chopped pecans
- 1 cup flake coconut

Preparation
Step 1
Cake:
Add boiling water to oatmeal in small bowl and let stand for 20 minutes. In large mixing bowl, cream sugars and margarine together. Add eggs and vanilla. Stir in oatmeal mixture. Combine dry ingredients and add to batter. Pour in greased and floured 9 x 13 cake pan. Bake for 45 minutes at 350 degrees.
Topping:
Combine all ingredients and spread over cake while it is still warm from the oven.
