Ingredients

  • Icing:
  • 5 eggs, separated
  • 2 c. sugar
  • 1 stick margarine
  • 1/2 c. shortening
  • 2 c. flour
  • 1 t. baking soda
  • 1/2 t. salt
  • 1 c. buttermilk
  • 2 c. coconut
  • 1 c. pecans, chopped
  • 1 t. vanilla
  • 8 oz pckg cream cheese, softened
  • 1/2 stick margarine
  • 1 box powdered sugar
  • 1 T. vanilla
  • Cream together & spread on cake

Preparation

Step 1

Beat egg whites, set aside. Cream sugar, butter & shortening together. Add egg yolks one at a time to creamed mixture.
Mix flour, soda & salt. Add flour mixture & buttermilk alternately to creamed mixture.
Then add coconut, pecans & vanilla.
Fold egg whites into other mixture.
Bake at 350 until done.
