  • 1 cup shredded sweetened coconut
  • 1/2 cup chopped almonds
  • 1/2 cup chopped pecans
  • 2 tablespoons dark brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon sea salt
  • 1 Half Stick (1/4 cup) Land O Lakes® Unsalted Butter
  • 1/2 cup pure maple syrup
  • 1 1/2 teaspoons vanilla extract
  • 1/3 cup dried cranberries

Preparation

Step 1

1. Preheat the oven to 300 degrees F. Line a large baking sheet with a Slipat or parchment paper. Set aside.

2. In a large bowl, combine oats, coconut, almonds, pecans, brown sugar, cinnamon, and sea salt. Set aside.

3. In a small saucepan, melt the Land O Lakes® Unsalted Butterbutter over medium heat and continue to cook, swirling occasionally, until butter turns golden brown and has a nutty aroma. Remove from heat and pour into a a medium bowl. Add the maple syrup and vanilla. Whisk until combined. Pour the brown butter maple mixture over dry ingredients. Stir until dry ingredients are well-coated.

4. Pour the granola mixture onto the prepared baking sheet. Spread granola into an even layer. Bake for 35 minutes or until granola is golden brown, stirring every 10 minutes. Remove from oven and stir in dried cranberries. Let the granola cool completely. Store in an air-tight container for up to 1 month.

Note-any dried fruit is great in this granola.
