Ingredients
- 2 pounds Stew Meat, cut into 1 inch squares, well trimmed
- Salt
- Pepper
- Onion Powder
- 3 tablespoons cooking oil
- 1/2 cup White Onion, diced
- 1 cup Carrots, diced
- 1 cup Celery, diced
- 1 teaspoon dried oregano
- (2) 14.5 ounce cans Beef Broth
- (2) 14.5 ounce cans Italian Diced Tomatoes(not drained)
- (2) 15 ounce cans Great Northern Beans(drained)
- (1) 8 ounce can tomato paste
- Shredded Parmesan Cheese
- French Bread for dipping

Preparation
Step 1
Sprinkle stew meat lightly with, salt, pepper, and onion powder. Set a large skillet to medium high heat, add oil, add stew meat, and cook on all sides until brown (no need to cook meat all the way).
Add meat to slow cooker.
Add onions, carrots, celery, and oregano to skillet, you may need to add more oil, cook for just a few minutes, add one can of beef broth to the pan to deglaze the meaty bits off the bottom of the pan. Add all of this to the slow cooker.
Add the remaining beef broth, italian diced tomatoes, beans, and tomato paste to the slow cooker.
Stir well to combine.
Set slow cooker to LOW for 8 to 9 hours.
Serve with shredded parmesan cheese, and french bread for dipping. Enjoy!
Note: this recipe can be easily divided in half. Same cooking time.
