Sweet Potatoes with Rosemary and Garlic

- 4 cloves garlic, unpeeled
- 2 teaspoons olive oil
- 1 teaspoon dried rosemary,

- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black

Step 1
Preheat the oven to 400". Peel
the sweet potatoes and cut
them lengthwise into 1/4-inch-thick
sticks.
In a large skillet, combine the
sweet potatoes, garlic, and
enough water to just cover. Bring
to a boil over high heat; cook for 1
minute and then drain.
Transfer the potatoes and
garlic to a baking sheet large
enough to hold the potatoes in one
layer. Sprinkle on the olive oil,
rosemary, salt, and pepper, and
toss to coat the potatoes well.
Bake the potatoes on the lower
shelf of the oven, turning
them occasionally, until cooked
through, about 35 minutes. Serve
the potatoes hot with a roasted
garlic clove for each diner.
