Crumb-topped, Supreme Chicken Casserole

Ingredients
- 4 boneless, skinless breasts, quartered (this can be cooked the night before)
- 1/2 cup chicken broth (or homemade chicken stock)
- 8 oz sour cream
- 8 slices Swiss cheese or 2 cups shredded mozzarella cheese
- 15 Ritz crackers, crushed or 1 package stove-top stuffing mix
- 1/2 cup Country Crock margarine

Preparation
Step 1
Preheat oven to 350 degrees Fahrenheit.
In a large skillet, saute chicken breasts in 2 tablespoons oil. Do not cook until all the way done. Only cook until both sides are white and the inside is still pink.
Transfer chicken to a 9x13 ungreased baking pan. Arrange breasts in pan so the entire bottom is covered.
Layer chicken breasts with Swiss cheese.
Spread sour cream on top.
Sprinkle crackers or breadcrumbs on top.
Pour chicken broth all over the top of the crackers or stuffing.
Spread the margarine on top of the crumbs.
Bake for 30 minutes or until chicken is no longer pink and the topping is golden brown.
