Maple-Glazed Brussel Sprouts

Ingredients
- 7 slices thick-cut bacon, chopped
- 3 lbs brussel sprouts, trimmed and cut in half
- 2 large shallots, thinly sliced
- 1/3 cup chicken broth
- 1/4 cup maple syrup
- 2 TBSP red wine vinegar
- `/4 tsp ground red pepper flakes

Step 1
1. In a pot cook bacon on med-high (7-8)minutes or until crisp. With a slotted spoon transfer to a plate. Remove all but 2 TBSP fat.
2.Reduce heat to med. and add brussels sprouts, shallots and ½ tsp. salt to pot. Cook 5 minutes or until sprouts are tender, stirring twice.
3. Uncover and add maple syrup, vinegar and red pepper. Cook 2 min or until well coated and vinegar has reduced stirring occasionally.
4. Stir in the bacon and serve.
