Ingredients
- 3 c stock (chicken, vegetable, turkey)
- 3 T unsalted butter
- 3 T all-purpose flour
- 8 oz red wine
- Pan drippings & veggies from turkey recipe
- Salt & pepper

Preparation
Step 1
1. Simmer 2c stock in a saucepan.
2. Use remaining cup to deglaze & scrape the roasting pan.
3. Strain juices from pan & from cooked vegetables into a pot. Let strained liquid sit for a few minutes; skim off fat from surface & discard.
4. Melt butter in delegated roasting pan over med heat. Whisk in flour.
5. Cook & constantly stir until thick & lightly browned (10-15min).
6. Add wine & stir, cooking until wine is nearly evaporated, taking care not to let mixture burn.
7. Add stock 1 ladle at a time until it reaches a boil, whisking constantly. Add pan juices; stir to incorporate. Lower heat; simmer 20 min, skimming away fat. Taste & adjust seasoning.
