- 1 tsp. Coffee-mate Sugar Free French Vanilla powdered creamer
- 1/3 cup light vanilla soymilk
- 1 no-calorie sweetener packet (like Splenda)
- 1/4 tsp. peppermint extract
- 1/2 cup Breyers Double Churn Free Creamy Vanilla fat-free ice cream
- 1/4 cup Cool Whip Free, frozen
- 3/4 - 1 cup crushed ice or 4 - 8 ice cubes (depending on how thick you want it)
- 1/2 standard-sized peppermint candy cane, lightly crushed
- 2 tsp. mini semisweet chocolate chips

Preparation
Step 1
Dissolve creamer in a glass with 2 tbsp. hot water. Add soymilk, sweetener, and peppermint extract, and stir. Transfer to a blender.
Add ice cream, Cool Whip, and ice to the blender, and blend at high speed until just mixed but still thick. (If needed, stop and stir. If it's still too thick to blend, stop and add a tiny bit more soymilk.)
Transfer to a glass and mix in the crushed candy cane and the chocolate chips. YAY!
