Ingredients

  • 1 pound green split peas(2 1/4 cups)
  • 1 (1 1/2 pounds) meaty ham bone
  • 1 1/2 cups sliced onion
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon dried marjoram, crushed
  • 1 cup diced celery
  • 1 cup diced carrots

Step 1

Rinse peas; combine with 2 quarts water, ham bone, onion, salt, pepper and marjoram. Bring to a boil; cover, reduce heat, and simmer (do not boil) 1 2 hours. Stir occasionally. Remove bone; cut off meat and dice. Return meat to soup; add celery and carrots. Cook slowly, uncovered, 30 to 40 minutes. Serves 6 to 8.
