Ingredients

  • Vinaigrette:
  • 1/2 cup red wine vinegar
  • 1/4 cup lime juice
  • 2 tbs fish sauce
  • 2 tbs soy sauce
  • 1/3 cup peanut oil
  • 1/4 cup sesame oil
  • 3/4 cup diced grilled papaya
  • 1/4 to 1/2 cup diced maui onions or red onion
  • 3/4 cup peeled, seeded, diced cucumber
  • 3 tbs chopped mint leaves
  • 1 tbs chopped basil leaves
  • 1 tsp sugar
  • 1/2 tsp white pepper
  • Tuna:
  • 1 1/2 lb sushi-grade tuna
  • peanut oil
  • salt
  • ground pepper
  • Grilled papaya:
  • 1 strawberry papaya
  • chili oil
  • salt

Preparation

Step 1

Vinaigrette:

In a large bowl, whisk vinegar, lime juice, fish sauce, soy sauce, peanut oil and sesame oil. Add the papaya and onions and mix well. Add cuk, mint, basil,m sugar, and pepper. Ref in a nonreactive bowl for 2 hours.

Tuna:

Preheat grill to high heat. Drizzel tuna with oil and season with salt and pepper. Sear for 1 minuet on each side. The inside should be raw. Slice tune in 1/4 in slices.

Paypaya:

Peel, seed and half the papaya Season with salt and chili oil. Grill for 2 minutes or until grill marks appear. Dice when cool
