Buttermilk Cake with Maple Bacon Glaze

Ingredients
- 8 slices bacon
- 3-4 T. brown sugar
- 1/4 tsp. cinnamon
- 1/2 cup (1 stick) butter, softened
- 1 cup sugar
- 1 1/2 cup buttermilk
- 1 egg
- 1 tsp. vanilla
- 2 1/2 cups flour
- 1 1/2 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/4 tsp. maple extract
- 2 tablespoons butter
- 1/4 cup pure maple syrup
- 1 cup powdered sugar

Preparation
Step 1
Preheat oven to 350 degrees. Prepare a 9x13 pan with baking spray.
Mix on low the softened butter, sugar, buttermilk, and vanilla. Add the dry ingredients to the butter mixture—flour, baking soda, baking powder, salt, and cinnamon.
Mix well and pour batter into prepared baking pan and bake for 30 minutes. Remove from oven and let the cake cool on wire rack for about 15 minutes.
In the meantime, place 8 slices of bacon on a broiling pan. Sprinkle lightly with brown sugar and cinnamon. Broil for 3-5 minutes, depending on the thickness of bacon. Do not burn, but make sure it is crispy. Cool and set aside. Cut into small pieces.
To prepare the glaze, in a small saucepan, melt the butter and syrup together over medium heat. Whisk the powdered sugar into the hot mixture until smooth.
Poke holes in the cake with a fork and immediately pour the glaze over the cooled cake. Spread evenly and sprinkle with bacon. Best if served warmed, or indivudually heat each piece before serving.
