Great all round chili recipe, tweek if you like it hotter.

Ingredients
- 2 T. olive oil
- 1 1/2 c. chopped onion
- 1 -2 stalks celery, chopped
- 8 garlic cloves, chopped
- 3 lbs ground chuck
- 4 T. chili powder
- 1 T. cumin
- 1 t. dried basil
- 1/2 t. dried oregano
- 1/2 t. dried thyme
- 1 28oz. can crushed tomatoes w/ puree
- 1 14 1/2 oz can chicken broth
- 1 12oz can beer
- 1 6oz can tomato paste
- 1 15 to 16 oz can chili beans
- 1/8 c. brown sugar (optional)

Preparation
Step 1
Heat oil in a heavy large Dutch oven over medium heat. Add oinion and garlic. Saute until onions are translucent, about 8 minutes.
Add chuck and saute until brown, about 5 minutes.
Add chili powder, cumin, basil, oregano and thyme. Stir 2 minutes. Add brown sugar if using.
Mix in tomatoes, chicken broth, beer and tomato paste.
Simmer until thickened to desired consistency, stirring occasionally to prevent sticking, about 1 hour 15 minutes.
Mix in the beans, simmer 5 minutes.
Season to taste with salt & pepper.
