Veggie Stir Fry

Ingredients
- (2-3 T coconut oil)
- (1-2 T minced garlic)
- Lg bag Thai vegetables
- (3 T raisins)
- 1/2 pkg cooked meatless bacon
- 8 torn basil leaves
- (1/4 c sherry)
- Optional; Parmesan cheese
- (Salt/pepper to taste)
- Loaf of heavy crusty bread; butter

Preparation
Step 1
Heat oil in lg skillet. Add garlic and stir fry for 1-2 min. Add ½ pkg or more of the Thai vegetables. Stir fry for 10 min. Add raisins, crumbled bacon and basil also stirring in sherry. Stir-fry for 3-5 min. Season w/ salt/pepper. Top each serving w/ Parmesan if desired.
Heat bread and serve w/ veggies.
