Ingredients
- Filling:
- 1 cup extra creamy peanut butter
- 3/4 cup icing sugar
- 3 tablespoons butter, softened
- 2 tablespoons vanilla
- 1/2 cup whipping cream (35%)
- Puff Pastry:
- Flour for rolling
- 1 package puff pastry, thawed
- 1 egg, beaten

Preparation
Step 1
Preheat oven to 400 degrees.
Filling:
In a bowl, whisk together peanut butter, icing sugar, butter and vanilla until mixture lightens in colour and texture.
In another bowl, beat cream cheese until soft peaks form, then fold into peanut butter mixture.
Puff Pastry:
Flour work surface and rolling pin. Roll out puff pastry, using cookie cutter, cut out rounds and transfer to bking sheet. Brush pastry rounds with beaten egg and lightly dock them with fork. Bake for 18-20 minutes or until golden brown.
Gently remove tops. Fill a piping bag with peanut butter mixture and pipe onto pastry rounds. Place tops back on, dust with icing sugar.
