Ingredients

  • Dressing:
  • 1/2 cup thinly sliced Japanese or English cucumber
  • salt
  • 1/2 cup daikon, peeled and cut into matchsticks
  • 1/2 cup slice marinated shiitake
  • 2 sheets marinated age
  • 14 oz marinated shirataki noodles
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1/2 tsp prepared hot mustard
  • 1/2 tsp salt

Preparation

Step 1

Toss the cucumber with salt and set aside.
Bring a pot of salted water to a boil and blanch daikon for 1 minute. Drain and plunge in ice water. When cooled, drain and dry.
Whisk together dressing ingredients and set aside.
Rinse off the cucumbers, drain and squeeze dry.
Combine all ingredients and toss with dressing
