  • Bottom Layer:
  • 1/2 cup margarine
  • 1 3/4 cups graham wafer crumbs
  • 1/4 cup sugar
  • 1 cup fine unsweetened coconut
  • 5 tbsp cocoa
  • 1/2 cup finely chopped walnuts
  • 1 egg, beaten
  • ..............................................
  • Filling:
  • 1/2 cup butter
  • 2 cups icing sugar
  • 3 tbsp. milk
  • 1 tsp vanilla extract
  • 2 tbsp Bird’s Eye vanilla custard powder
  • few drops of yellow food colouring
  • ....................................................
  • Topping:
  • 4 squares of semi-sweet chocolate
  • 2 tbsp butter

Preparation

Step 1

Bottom Layer:
Mix margarine, sugar, and cocoa in the top of a double boiler.
Add egg and stir to cook and thicken.
Remove from heat and stir in the remaining ingredients.
Press into an ungreased 9 inch x 9 inch square pan.

Filling:
Cream together all ingredients and beat until light. Spread over bottom layer.

Topping:
Melt the chocolate and butter over low heat.
Cool slightly.
Spread over filling.

Chill in refrigerator
