Spice Cake, Layered Cake

Ingredients
- 1 (9-inch) cake
- 1 cup unsalted butter, softened
- 2 cups sugar
- 6 large eggs, separated
- 3 cups cake flour
- 2 1/2 teaspoons baking powder
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/8 teaspoon ground cloves
- 1 cup whole buttermilk
- cinnamon cream-cheese frosting
- Yield: approximately 4 1/2 cups
- 1 (8-ounce) package cream cheese, softened
- 3/4 cup butter, softened
- 1 tablespoon heavy whipping cream
- 1/4 teaspoon ground cinnamon (optional)
- 7 cups confectioners' sugar

Preparation
Step 1
1 recipe Cinnamon Cream-Cheese (If you don't want the cinnamon just omit and add 1/2 vanilla it for cream cheese frosting.)
Frosting (recipe follows) Garnish: ground cinnamon
1. Preheat oven to 350 F.. Spray 3 (9-inch) cake pans with nonstick baking spray with flour. Set aside.
2. In a large bowl, beat butter and sugar at medium speed with an electric mixer until fluffy. Add egg yolks, one at a time, beating well after each addition.
3. In a medium bowl, combine flour, baking powder, ginger, cinnamon, nutmeg, salt, and cloves; sift. Add to butter mixture, alternately with buttermilk, beginning and ending with flour mixture.
4. In a medium bowl, beat egg whites at high speed with an electric mixer until stiff peaks form. Gently fold into butter mixture. Divide batter evenly among prepared pans.
5. Bake until a wooden pick inserted in the center comes out clean, 20 to 22 minutes. Let cool in pans for 10 minutes. Remove from pans, and let cool completely on wire racks.
6. Spread Cinnamon Cream-Cheese
Frosting between layers and on top and sides of cake. Garnish with cinnamon, if desired.
Cinnamon Cream Cheese Frosting:
1. In a large bowl, beat cream cheese, butter, cream, and cinnamon at medium speed with an electric mixer until creamy. Gradually add confectioners' sugar, beating until smooth.
