Ingredients
- 1/4 cup lowfat mayonnaise
- 2 tablespoons Parmesan cheese
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon anchovy paste, optional
- 1/4 teaspoon freshly ground pepper
- 1/2 cup fresh bread crumbs
- 3 tablespoons chopped fresh parsley
- 4 cod fillets, 6 oz each
- Lemon wedges

Preparation
Step 1
1. Heat oven to 450.
2. Combine mayonnaise-pepper.
3. Combine bread crumbs and parsley on wax paper. Spread one side of each cod fillet with mayonnaise, then dip coated side into crumbs to coat. Place crumb side up on sprayed baking sheet.
4. Bake 15-20 mins or until cooked through browned. Serve with lemon wedges.
Notes: Excellent - left out bread crumbs and parsley, added 2 cloves garlic (minced).
