Ingredients
- 1/2 cup fresh lime juice
- 1/4 cup orange marmalade
- 3 garlic cloves mashed to paste with 1 tsp salt
- 1/2 cup fresh coriander sprigs, washed and chopped finely
- 4 tbsp olive oil
- 1 tbsp soy sauce
- 1/2 tsp dried hot pepper flakes
- 1 lb large shrimp, shelled with tail still on

Preparation
Step 1
Whisk together lime juice, marmalade, garlic paste, corianer, 3 tbsp olive oil, soy sauce, red pepper flakes and salt & pepper to taste. Reserve 1/3 cup for dipping. In ziplock bag add shrimp and remaining mixture. Marinate for atleast 45 minutes. Drain shrimp and pat dry. Skewer shrimp and place on BBQ until done. Serve with reserved dip.
