- 3 tablespoons cornstarch

- 2 1/2 cups water -- warmed
- 2 zest lemons, plus 1/2 cup fresh juice
- 7 tablespoons butter -- Cut into pieces

Step 1
Bring cornstarch, salt, and warm water to a boil, whisking constantly. Cook until mixture thickens, about 5 minutes. Stir in butter and zest and juice. Cool completely before putting in jars. Keeps up to 2 weeks.
