Ingredients

  • Filling:
  • 6 quarts water
  • 4 tbsp salt
  • 4 cups rice
  • 2 tsp pepper
  • 2 sticks butter
  • 6 eggs, beaten
  • 3 cups parmesan cheese, grated
  • Dough:
  • 4 cup flour
  • 4 tbsp butter
  • 1 cup whole milk
  • 2 eggs
  • 2 tsp salt
  • 1/4 cup water, as needed
  • egg yolks for egg wash on dough

Preparation

Step 1

Place 6 quarts of water and salt into large pot. Cook the 4 cups of rice (approx 12 min). Drain water, then add the butter and let melt into rice. Once the rice is cool, add the beaten eggs and mix well. Add cheese and pepper. Mix well, but don't crush the rice.

Dough:
Melt butter in saucepan. Add the milk until lukewarm. Beat the eggs and salt together. Add the eggs to the butter/milk mixture. Add the flour to the mixture. Add water if needed. Let stand 10 minutes

Place dough in bottom of pie pan. Put filling in. Top the pie with the remaining crust and egg wash with the egg yolks. Bake for 1 hour at 375 degrees.
