  • 6 large waxy potatoes
  • 1 head garlic, separated into cloves but not peeled
  • 1 bunch rosemary, leaves only, finely chopped
  • 1/4 cup extra virgin olive oil
  • salt and pepper

Step 1

Preheat oven to 425. Bring a large pot of salted water to boil. Cut potatoes into 1" cubes and blanch in boiling water for 2 minutes.

Put potatoes on a baking sheet and toss with garlic, rosemary, and oil. Season with salt and pepper and spread around the sheet. Bake or 30 minutes and golden brown.
